Southwestern Chopped Salad


More delicious chopped salads...and you can make this right at home!! This recipe is packed with Southwestern flavor and crunch. We've used our Pan-Seared Chicken Breast recipe that you can find on our blog, and our Creamy Avocado Cilantro Dressing to pull this Southwestern specialty together.

Macronutrient Balance: 37g Protein / 35g Fat / 31g Carbohydrates - this makes one serving

Ingredients:

  • 4 oz pan seared chicken breast

  • 1 serving of creamy cilantro lime dressing

  • 3 oz chopped romaine

  • 4 cherry tomatoes - halved

  • 2.5 oz orange bell pepper  - cut in strips

  • 1 green onion - chopped

  • 1/4 cup corn

  • 1/4 cup black beans

  • 1/4 cup shredded Mexican cheese

Instructions:

  1. Add all ingredients to a bowl and mix with dressing.

  2. Serve in a large salad bowl or eat right out of the mixing bowl!
