More delicious chopped salads...and you can make this right at home!! This recipe is packed with Southwestern flavor and crunch. We've used our Pan-Seared Chicken Breast recipe that you can find on our blog, and our Creamy Avocado Cilantro Dressing to pull this Southwestern specialty together.
Macronutrient Balance: 37g Protein / 35g Fat / 31g Carbohydrates - this makes one serving
4 oz pan seared chicken breast
1 serving of creamy cilantro lime dressing
3 oz chopped romaine
4 cherry tomatoes - halved
2.5 oz orange bell pepper - cut in strips
1 green onion - chopped
1/4 cup corn
1/4 cup black beans
1/4 cup shredded Mexican cheese
Add all ingredients to a bowl and mix with dressing.
Serve in a large salad bowl or eat right out of the mixing bowl!
