Tri-Color Pepper & Bean Salad

Side dishes can rule the world because they complete our meals. This one packs some protein along with the carbs that are typical in sides, so serve this one on it's own or it goes really well with any grilled or pan-cooked protein. If you're looking for a well-balanced and super tasty meal, pair it with our Thyme and Garlic Pork Chop.

Macronutrient Balance: 6g Protein / 3g Fat / 20g Carbohydrates - this makes 4 (4.5 oz) servings


  • 1 can small red beans, drained and rinsed

  • 2 oz cucumber cut into half moons

  • 3.5 oz total of sliced orange, red, and yellow bell pepper

  • 2 tsp olive oil

  • 1 Tbsp lemon juice

  • salt and pepper to taste


  1. In a large mixing bowl, mix all ingredients together.

  2. Serve immediately or chill for 1-2 hours before serving.
