This awesome spicy watermelon salad goes over well any day of the week. Don’t like spice? Just cut it out of the recipe and this will still be super sweet and delicious.

8oz chilled cubed watermelon
1 oz crumbled feta cheese
5 fresh mint leaves cut into strips
1/8 tsp cayenne pepper (this is your spicy option)
Refrigerate watermelon (either before or after cutting).
Slice and cube watermelon and remove seeds.
Slice mint leaves into strips.
In a large bowl toss watermelon with feta, mint and cayenne.
Serve right away for a cold salad or refrigerate until you’re ready to serve.
