Smoked Sausage & Potato Egg Scramble


Yay for breakfasts, and for smoked sausage! Always check that the products you use are sugar free - so make sure to read labels when looking for a sausage to make this delicious and simple breakfast. If you're looking to cut out some fat, you can use egg whites instead of whole eggs, too or even go half and half.


Macronutrient Balance: 23g Protein / 20g Fat / 22g Carbohydrates - this makes 1 serving


Ingredients:

  • 2 oz smoked uncured sausage - cut into half moons

  • 4 oz frozen and plain diced potatoes or hashbrowns - defrosted (or cut your own potatoes!)

  • 2 eggs

  • 1/2 tsp dried parsley

  • salt and pepper to taste

Instructions:

  1. Bring a medium pan to high heat and add sausage. Brown on all sides and set aside.

  2. Using the fat drippings from the sausage, add in potatoes and leave on medium heat and cover cooking for 5 minutes. Lift cover and flip adding salt and pepper to taste and cook for an additional 3-4 minutes or until crispy and fully cooked.

  3. Sprinkle dried parsley and bring the heat up to medium/high and crack both eggs over the potatoes. Stir occasionally until eggs are fully cooked and mixed with the potatoes. Add the potato egg scramble to the plate of cooked sausage and enjoy!
