Sal's Legal Chocolate Brownie Cake

It's Valentine's Day, and we know you want some chocolate! But we also know some days you're just hoping for some sort of dessert, sweet, or may be trying to pull out of cravings from a prior cheat meal, perhaps. But really, this cake-like brownie is a go-to for ANY day where you might be wanting something chocolatey and delicious! It's even a superb snack! We call it legal because it's dairy, sugar, and gluten free, pretty balanced macro-wise, can be doctored up however you like, and bonus: it's done in about 5 minutes!

Macronutrients: 14g Protein / 14g Fat / 16g Carbohydrates. This recipe makes one serving (you could share it, but why not just make two, then? ;-))

Ingredients:

1/2 Medium-Large Banana

1 Large Egg + 1 Egg White

1 Tbsp Almond Butter (we make it homemade with nothing added)

1 Tbsp Unsweetened Cocoa Powder

.5 Tsp Cinnamon (optional but delicious, and could be even a pinch of cayenne pepper!)

Pinch of Coarse Kosher Salt (optional but the sweet and salty is nice!)

Instructions:

  1. Mash the banana with fork in a cereal-sized bowl

  2. Stir in egg and additional egg white

  3. Stir in the almond butter until smooth

  4. Gently stir in the unsweetened cocoa powder and cinnamon (or other spice you might like!)

  5. Top sparingly with a pinch of kosher sea salt (you could get more fat and texture in this dessert if you add some of your favorite chopped nuts to the mix before cooking)

  6. Clean the excess of mixture from sides of bowl (so it doesn't dry up and burn)

  7. Microwave for 2.5-3 mins, and voila, a delicious, cake-like brownie.
