Roasted Lemon Brussels Sprouts

This beautiful sprouty side dish is superb year round! If you're not fond of the bitterness that brussels can sometimes have, the acid in the lemon cuts through and makes these brussels just right. Give them a go for a low carb veggie with some protein included!

Macronutrient Balance: 5g Protein / 3g Fat / 15g Carbohydrates - this makes 4 (5.5 oz) servings


  • 1.3 lbs brussels sprouts - ends removed and cut in half

  • 1 Tbsp olive oil

  • 1 Tbsp sea salt

  • 1/2 juice of a lemon


  1. Preheat oven to 475F

  2. Place brussels sprouts on a cookie sheet and drizzle with olive oil. Move brussels sprouts around to coat them evenly and spread them out on the pan so they aren't over crowded and place them in the oven for 10 minutes. 

  3. Remove brussels sprouts from the oven and evenly sprinkle with sea salt and lemon juice. 

  4. Place back in the oven to cook for an additional five minutes.
