Cilantro Lime Jalapeno Slaw

Updated: Jun 13, 2018

This is a very simple red cabbage slaw that is great as a side dish to any grilled meats or perfect for fish tacos.

Serving Size: Makes six 2 ounce servings.

Macronutrient Breakdown: 2oz serving, 0.5g Protein / 0g Fat / 4g Carbs

Ingredients

  • 2 cups shredded red cabbage

  • 1/2 large jalapeno, seeded and sliced

  • 1 lime

  • 2 Tbsp fresh chopped cilantro

  • Salt to taste

Instructions

  1. Shred cabbage really thinly. A mandolin works great here. De-seed half a jalapeno and cut into thin slices, and finely chop two tablespoons worth of cilantro. Mix together and squeeze the juice of one lime and season with salt.

  2. Just a little tip here - the fresher the jalapeno the less spicy it is. If you like your jalapenos spicy, let them sit for a couple of days before using them. Time equals heat with these peppers!
