This is a very simple red cabbage slaw that is great as a side dish to any grilled meats or perfect for fish tacos.

Ingredients
2 cups shredded red cabbage
1/2 large jalapeno, seeded and sliced
1 lime
2 Tbsp fresh chopped cilantro
Salt to taste
Instructions
Shred cabbage really thinly. A mandolin works great here. De-seed half a jalapeno and cut into thin slices, and finely chop two tablespoons worth of cilantro. Mix together and squeeze the juice of one lime and season with salt.
Just a little tip here - the fresher the jalapeno the less spicy it is. If you like your jalapenos spicy, let them sit for a couple of days before using them. Time equals heat with these peppers!
