Protein Pancakes


There are so many variations for protein pancakes but this has got to be our absolute favorite. These have a great pancake consistency, they hold their thickness, and they actually taste like traditional pancakes. The secret ingredient to get that higher protein number is, wait for it - cottage cheese! If you aren't a cottage cheese lover, we promise you won't even notice it's there.  Macronutrient Balance: 27g Protein / 13g Fat / 33g Carbohydrates - this makes 4 servings, each serving is 4 pancakes. Ingredients:

  • 2 cups dried oats

  • 2 cups 4% cottage cheese

  • 6 eggs

  • 2 tsp cinnamon 

Instructions:

  1. In a blender/food processor, toss in all of your ingredients and blend until you get a smooth batter. 

  2. Heat medium sized pan to medium-high heat. Once the pan is hot to the touch, use a 1/4 cup to scoop the pancake batter into the pan. 

  3. Once the pancakes bubble (about 2 minutes), flip over for an additional 1-2 minutes. Remove from the pan and set on a cooling rack until your pancakes are done.
