Carrots are just one of those underrated veggies, but that's totally okay because they are just delicious the way they are. We oven roast the lovely carrots in this recipe and it brings out their natural sweetness and makes a great side dish to any protein.
Macronutrient Balance: 3g Protein / 7g Fat / 16g Carbohydrates - this makes 3 (4.3oz) servings
1.4 lbs of carrots - already peeled and cut, tips cut off and cut in half and into quarters
1.5 Tbsp olive oil
Kosher salt and pepper to taste
Preheat the oven at 425 degrees F.
Peel outside of carrots, cut off the tips and slice into half and then quarters
In a bowl toss all of the ingredients together
Spread out on a baking sheet and bake for 20-25 minutes, flipping halfway through. Serve hot or warm.
