Oven Baked Jerk Chicken

This is a fall off the bone, call your mama and tell her you're winning at life kind of dish! We love, love, love the flavors in this recipe...and that little kick from the scotch bonnet pepper combined with the citrus from the lime and that heartiness from the red onion is just everything. Definitely do not miss out on this super simple recipe that takes 5 minutes to prep and while it's cooking, you just put it in the oven on low and walk away!
Serving size: This recipe makes approximately 4 (3.25 ounce) servings Macronutrient Balance: 43.1g Protein / 23.7g Fat / 6.6g Carbohydrates
2 lbs chicken drumsticks (approx 8 drumsticks)
1 medium sized red onion - peeled and quartered
1 Tbsp Olive Oil
1 Tbsp Soy Sauce or Coconut Aminos
6 garlic cloves - pealed
1 scotch bonnet pepper (habanero!)
1 tsp salt
1 tsp black pepper
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp cinnamon
4 sprigs fresh thyme
juice of 1 lime
1/3 cup water
Toss all of your ingredients from the onion on down in a food processor and pulse until smooth.
Pour marinade over chicken and let marinade for a minimum of four hours.
Once ready to cook, preheat oven at 350F, space out drumsticks in a baking dish and pour marinade over it evenly. Cover with foil and cook for 2.5 hours.
Remove from the oven and serve!
