Green Chili Turkey Meatloaf


Here comes a favorite quality, lean protein staple that satisfies without overfilling, is delicious, and so simple. This green chili turkey meatloaf highlights those green chilies and is paleo, to boot! No breadcrumbs to be found in this yummy new version of an old-school favorite. Make it a new go-to for several meals, and mix and match with veggies of your choice!


Serving size: This recipe makes 8 (4 oz) servings


Macronutrient Balance: 23g Protein / 10g Fat / 3g Carbohydrates per serving of meatloaf


Ingredients: 

  • 2 lbs Ground Turkey

  • 1 Egg

  • 2 Tbsp Fire Roasted Diced Green Chilies

  • 6 Tbsp Salsa Verde

  • 2 tsp Green Chili Powder

  • 1/4 cup Almond Flour

  • 1/4 tsp Kosher Course Sea Salt

  • (optional: 1/4 cup diced yellow onion - not included in macros above)


Instructions:

  1. Preheat oven to 325 F.

  2. In a large mixing bowl, combine turkey with the egg and green chilies

  3. Mix in 2 Tbsp of the Salsa Verde

  4. Add dry ingredients to mixture: Almond Flour and Chili Powder

  5. Cover baking sheet with aluminum foil.

  6. Place meatloaf mixture on pan and shape like a loaf.

  7. Use remaining 4 Tbsp of Salsa Verde to coat the top of the meatloaf.

  8. Bake at 325 degrees F, for 90 minutes, rotating pan 45 minutes in.

  9. Slice and serve with your favorite veggies to balance out your meal!
