Cuban Chicken & Black Bean "Rice" Bowl

This is definitely a favorite of ours, and worth a bit of effort to pull together. The combination of flavors is mouthwatering and perfect for a summer time, or anytime meal! Made with cauliflower rice, we get some great veg in place of starchy rice, without sacrificing flavor! If you're thinking of ditching the mango salsa and plantains because its just too many steps, don't! They're just TOO good and really complete this dish! There are a lot of different components to this dish and it would be a great meal to have as leftovers, so we definitely recommend doubling or tripling the recipe so you have enough for leftovers!

  2. Toss cauliflower rice with lime juice and cilantro.

Mango Salsa:

  1. In a small bowl, toss chopped mango, red onion and cilantro together

  2. Squeeze lime juice and season with salt

Plantains:

  1. Heat oven to 400 degrees F

  2. Peal the plantain and cut into slices with a thin-medium thickness

  3. Line a cookie sheet with a piece of foil and place plantain slices on top

  4. Bake for 15 minutes or until soft

Once all of the ingredients have been prepped separately, add all of the elements together and enjoy!
