Another super simple recipe, heavy on the protein on the blog! For all you pineapple and pork lovers, this is a great go to that you can throw in the crockpot and walk away and not think much about it until it's done. We know it's tough for many of our clients to meet their protein intake needs, too, and this recipe makes that way easier!
Macronutrient Balance: 43g Protein/ 5g Fat/ 15g Carbohydrates - this makes approximately 6 (8.5 oz) servings
Ingredients: 1 package of pork tenderloins (two in a package approx 2lbs and 11oz) 1 can of pineapple chunks - with juice (no added sugar) 1/4 cup soy sauce or coconut aminos 6 garlic cloves - minced 1 tsp black pepper
Instructions: 1. Put all ingredients in the crockpot and set on high for 5.5 hours. 2. Once the timer goes off, shred the pork with two forks and let sit with the heat off for an additional 20 minutes so the pork can soak up some of the sauce. Serve with cauliflower rice and some sriracha mayo, or a side of butternut squash, or toss in a salad. Enjoy!
