This recipe uses our recipe for Chicken Kabobs on our blog as the protein for this dish. Feel free to add additional toppings to compliment this, like crumbled feta and pickled onion as it suits your nutrition plan!
Serving size: This recipe makes one serving with 4 ounces of chicken, 1/3 cup quinoa, 4 cherry tomatoes, 5 olives, 1/2 cup tzatziki, and 1.5 oz cucumber

Ingredients:
To assemble the bowl:
1/3 cup quinoa cooked (follow box/bag instructions to make this)
1 oz cucumber, cut into round thin slices
4 cherry tomatoes, cut in half
5 kalamata olives
For the Tzatziki Sauce:
1/2 cup 2% plain greek yogurt
1/4 lemon- juiced
1/2 tsp white vinegar
1 tsp dried mint
0.5 oz cucumber -finely minced
1/2 garlic clove - finely minced
salt and pepper to taste
Instructions:
Mix all ingredients together for the tzatziki
Assemble all ingredients into a bowl (note: chicken kabobs and quinoa should be warm/hot before assembling everything else)
