Blood Orange, Beet & Goat Cheese Salad


What a flavor combination this recipe delivers! It goes great as a side dish for any season and may be a great healthier choice to add to your holiday menus this year. Mix it up and toss it on top of a bed of arugula for some added color and volume or dress it with a bit of balsamic for those larger family gatherings this season. Just make sure to add those additional items to your food tracker if you’re counting. 


Macronutrient Balance:  8g Protein / 7g Fat / 29g Carbohydrates - this makes 1 serving


Ingredients:

  • 4.5 oz cooked beets, sliced into thin round slices

  • 1 small blood orange, peeled and cut into 1/8ths 

  • 1 oz goat cheese

  • Sprinkle of sea salt flakes (optional) 

Instructions:

Layer your ingredients on a plate and serve alongside your favorite protein.
