This is definitely a comfort dish with some southern charm. We absolutely adore these black eyed peas and if you're looking for an additional protein to complete the meal, brown some ground beef and season it and throw into a serving of these black eyed peas for a nice hearty bowl of food!
Macronutrient Balance: 9g Protein / 3g Fat/ 26g Carbohydrates - this makes 6 (6.2oz) servings
Ingredients:
1/2 small onion (about 2 oz) finely diced
1/2 bell pepper (about 2 oz) diced
1 cup frozen spinach
1 Tbsp tomato paste
1 Roma tomato - diced
1 chicken bouillon cube
1 bag of frozen black eyed peas
3 cups of water
salt and pepper to taste
Instructions:
In a medium sized sauce pan, bring stove to medium heat and add olive oil.
Sauté onion until translucent then add the bell pepper and sauté for an additional 2-3 minutes.
Add the frozen spinach and tomato paste and stir for another 1-2 minutes.
Add the bouillon cube and 1 cup of water and break up the cube so it dissolves.
Add the remaining water, diced tomatoes, bag of black eyed peas and bring to a boil.
Cover and let simmer for 45 minutes, stirring occasionally about 2-3 times throughout.
Once the timer goes off, season with salt and pepper to taste.
