As promised - our Southwest Chicken Salad is here! Use our very easy Crockpot Salsa Chicken recipe to make this delicious and easy salad that doesn't require any dressing because it's already got so much flavor!
Macronutrient Balance: 26g Protein / 17g Fat / 20g Carbohydrates - this makes 1 serving
1 serving of crockpot salsa chicken
1.8 oz chopped romaine
1 oz red bell pepper - sliced/chopped
3.5 oz cucumber cut into half moons
2 oz roma tomatoes
1 oz avocado (about 1/4 of an avocado)
1/8 cup canned cuban black beans (drain juices from the can)
5 kalamata olives
1 tsp olive oil
sea salt and crushed black pepper to taste
1. Assemble all of your vegetables
2. Top with black beans and chicken and drizzle with olive oil.
3. Season with salt and pepper to taste. Enjoy!
