During one of our Nutrition Challenges, we asked clients to create meals and provide us no-sugar recipes as a challenge task. We drew from those recipes and selected some to feature on our Food for Thought Blog, and so here we bring you "Mary's Chicken Olé," from Mary O'Connell! Serving size: This recipe makes 6 (4oz) servings of chicken with 1 oz of sauce
Macronutrient Balance: 26g Protein / 7g Fat / 4g Carbohydrates
24 oz chicken breast, divided into 4 oz pieces
1/2 cup hot chunky salsa
1/4 c Dijon mustard
2 Tbsp fresh lime juice
2 Tbsp butter
Combine salsa, mustard, and lime juice in a large bowl.
Add chicken and mix together.
Cover and marinate in fridge for at least 30 minutes.
When ready to cook, heat large skillet on medium/high heat and melt butter until it just begins to foam.
Brush off as much of the marinade as you can from pieces of chicken, and cook for 5 minutes on one side.
Flip chicken and cook for an additional 5 minutes, and cover with foil for the last 5 minutes to allow the chicken to steam and moisten.
Once chicken is done cooking, add the marinade into the skillet with chicken and cover and cook on low/medium heat for an additional two minutes.
Serve with a side dish to compliment this really easy and delicious protein.
